Drizzle Fat Washed Negroni

Ingredients
2 cups of gin
4 tbsp Drizzle
1 oz dry vermouth
1 oz Luxardo Bitter Bianco
2 drops of saline solution
Zest of lemon peel
Garnish: Caviar topped EVOO Chips + more Drizzle

Begin by preparing the fat-washed gin. Combine 2 cups of gin and 4 tablespoons of Drizzle in a jar. Let it sit at room temperature for 2-3 hours, then place it in the freezer overnight.
Once the olive oil solidifies, strain the mixture through a damp coffee filter lined fine mesh sieve. Store in the refrigerator.
For the cocktail, combine 1 ounce of the fat-washed gin, 1 ounce of dry vermouth, 1 ounce of Luxardo Bitter Bianco, and 2 drops of saline solution in a mixing glass.
Fill with ice, stir until well chilled, then strain into a chilled rocks glass over a large ice cube.
