Lo-Fi Aperitifs' Drizzle Gin Sour

Ingredients
For the thyme simple syrup:
8 oz water
3 big thyme sprigs
16 oz granulated sugar
For the cocktail:
1 oz Gin
1 oz Lo-Fi Dry Vermouth
¾ oz lemon juice
¾ oz thyme simple syrup
½ oz Drizzle
1 oz egg white (whites from 1 large egg)
Garnish with thyme sprig
Instructions
Active Time: 5 minutes
Full Time: 5 minutes
Make the thyme simple syrup. Bring 8 oz of water to a boil and add three big thyme sprigs. Reduce the heat to simmer and allow the thyme to steep for 5 minutes.
Strain the thyme out of the water, add 2 cups granulated sugar and whisk until dissolved.
To make the cocktail, combine 1 oz gin, 1 oz Lo-Fi Dry Vermouth, ¾ oz lemon juice, ¾ oz thyme simple syrup, ½ oz Drizzle, and 1 oz egg white (white from 1 large egg) into a cocktail shaker.
Vigorously dry-shake (without ice).
Add ice to the cocktail shaker and shake until cooled.
Strain into cocktail glass and garnish with a sprig of thyme (and Drizzle, if you're feeling it).
