
Spring Herb Mayo
Mayo so good it'll put a spring in your step!

Ingredients
2 Egg Yolks
1 cup of Drizzle
¼ tsp mustard
Painful of Tender Herbs of Your Choice (i.e. Chives, Parsley, Cilantro, Dill)
Salt

Chop herbs very finally if making mayonnaise by hand. If using immersion blender, only a rough chop is necessary.
Add egg yolks to a large mixing bowl with the mustard and a small pinch of salt.
Add eggs, about ¼ cup of Drizzle, mustard, and a pinch of salt to a cup with high sides that will fit your immersion blender.
Blend on medium, leaving the blender at the bottom of the cup at first until the emulsion forms before raising it up to incorporate the rest of the oil.
Slowly add in the rest of Drizzle and continue to blend until all oil has been incorporated and the mayonnaise forms stiff peaks upon removing the blender.
Mix in herbs and blend. Pairs well with Fried Zucchini Sticks!
