Savory Oatmeal with Porcini Mushrooms
This savory oatmeal, made with porcini mushrooms, fresh scallions, and ginger, is gonna be your new favorite way to switch up your morning oats.

Ingredients
1 tbsp Drizzle
1 tsp Honey
1 tbsp Soy sauce
1 tsp Rice wine vinegar
1 tsp chili flakes
1 tsp toasted sesame seeds
1 Garlic clove, thinly sliced
1 thumb sized piece of ginger, peeled and thinly sliced
350ml Chicken or vegetable stock
5g Dried porcini mushrooms
3/4 cup rolled oats
100ml oat milk
Handful chopped spinach
1 egg
2 Scallions, sliced
Handful of cilantro chopped
1 tbsp Sizzle

Full Time: 20 min
Whisk together all the ingredients for the dressing and set aside. Heat 1 tbsp Sizzle in a medium saucepan on a medium heat. Add the garlic and ginger, cook for 2 minutes until slightly golden. Add the stock and porcini mushrooms, stir together.
Pour in the oats and oat milk, let this bubble away on a low heat for 7-8 minutes, stirring continuously until glossy, add a splash more water if it becomes too thick. Add in the chopped spinach and let this wilt for 2 minutes.
Serve into a bowl, top with a soft boiled egg, scallions and cilantro, then drizzle over your dressing and extra Drizzle.
