Flying Dutchman Burger

Considered opening up our own drive thru once we took a big bite of this perfect sizzling, cheesy, onion-y burger!

Ingredients

For the sauce:

⅓ cup mayonnaise

⅓ cup sweet relish 

2 tbsp ketchup

1 tsp yellow mustard 

1 tsp apple cider vinegar 

Salt and pepper, to taste

For the burger:

2 tbsp Sizzle

1 large yellow onion, peeled and sliced into (4) ½-inch rings 

4 slices Cabot Vermont Sharp Cheddar

1 pound ground beef

Salt and pepper, to taste

Make the sauce. In a small bowl, mix all the ingredients and season to taste with salt and pepper.

Heat 1 tbsp of Sizzle in a large cast iron skillet or griddle. Add onion slices and sprinkle with salt. Let cook until lightly charred, ~ 3 minutes, then flip and repeat on the second side.

Top 2 of the onion slices with a slice of Cabot cheddar. Cover and cook until cheese is melted, ~ 1 minute. Remove to a plate or sheet tray. Wipe skillet clean.

Divide beef into 4 equal portions and shape into 5-inch patties. Season with salt and pepper on both sides.

Heat remaining 1 tbsp Sizzle in cleaned skillet over medium high heat. Add patties to skillet and cook until lightly charred, 2 minutes, then flip. Top 2 patties with a slice of Cabot cheddar and cook until melted. Stack the 2 cheese-less patties on top of the cheeseburgers to form a sandwich.

Assemble the burgers. Place a cheesy charred onion on a cutting board. Top with the burger sandwich, then a heaping tablespoon of prepared sauce, then the remaining cheese-less onion ring. Repeat with remaining charred onions and patties. Serve immediately.
