Decked Out Grilled Cheese

Yes we're using sourdough, yes we're using apple butter, yes calabrian chilis are involved... Read on for the ultimate decked-out grilled cheese that'll satisfy kiddo and adult palates alike!

Ingredients

1 shallot sliced thin

1 sprig of rosemary minced

1 tbsp Sizzle

1 splash of balsamic vinegar

Salt & pepper

3 tbsp mayonnaise

1 tsp Calabrian chili paste (or more for spice)

2 tsp Drizzle

1 tbsp apple butter (store-bought or homemade if you want to go hardcore with it)

2 tbsp salted butter

4 slices of sharp cheddar (please choose your adventure on the quantity here! However cheesy you want!!)

5 slices of a halved green apple

2 slices thick sourdough

On medium-low heat, add 2 tbsp Sizzle in a medium skillet. Add shallots, rosemary, salt, and pepper, and cook low and slow for about 20 minutes or until soft and slightly caramelized.

While cooking the shallots, mix 2 tbsp mayonnaise and Calabrian chili paste in a small bowl and set aside.

Once shallots have cooked for 20 minutes, add balsamic vinegar and stir. Remove from heat. Set aside caramelized shallots in a small bowl.

Spread the final 1 tbsp of mayonnaise on one side of each of the sourdough slices.

On medium heat, add butter to the skillet.

While butter is melting, add apple butter to the inside of one sourdough slice, and the Calabrian mayonnaise to the other. On the outside of the two slices, add the last tbsp of mayo and spread evenly.

Once the butter has melted, add the slices of bread, mayo side down, to the skillet and assemble the caramelized shallots, cheese, and apple slices on one side of the bread.

Cook for about 4 minutes or until the bread turns golden brown.

Top the sandwich with the empty slice of bread and cover for another 3-4 minutes until the cheese is fully melted.

Slice and enjoy with tomato soup (and some Drizzle on top) or chips!
