Blueberry Muffins

Wake up and smell the fresh blueberry muffins! 

Adapted from NYTimes: The Ritz-Carlton's Blueberry Muffins

Ingredients

3½ cups sifted all-purpose flour 

2 tbsp baking powder

¾ cup sugar, plus more for topping

Pinch salt, optional

5 eggs, slightly beaten 

½ cup milk 

2 tbsp unsalted butter, melted and cooled

½ cup Frizzle (+ Frizzle Spray)

4-5 cups of blueberries

Full Time: 35 Minutes

Heat oven to 425F. Mix all dry ingredients together. Stir in Frizzle, eggs, milk, and butter. Mix in blueberries last.

Grease the top of large muffin tins with Frizzle. Insert paper cups and spoon batter to the top of the paper cups. Sprinkle generously with sugar.

Reduce the heat to 400F before placing muffin tins in the oven. Bake until golden brown, about 25 minutes. Remove from tins and cool.
