
Beer Battered Cod
Crispy, golden, and Frizzled to perfection. Goes really well with Frizzle Fries and tartar sauce!!
Ingredients
¾ cup all-purpose flour
½ cup rice flour
1 tsp onion powder
1 tsp Kosher salt
1 tsp baking powder
½ tsp Old Bay seasoning
¼ tsp paprika
1 cup beer
1-1½ lb cod fillet (cut into square pieces or long filets)
1 tsp kosher salt
¼ freshly ground black pepper
~ 4 cups Frizzle
Lemon wedges, for serving

In a large bowl, combine all purpose flour, rice flour, onion powder, kosher salt, baking powder, Old Bay seasoning, sweet paprika, then whisk well. Pour in cold beer, then whisk until mostly smooth. (There should be a few lumps—do not overmix!)
Once you have created your batter, place Frizzle in a large deep pot then heat over medium-high until it reaches 375F. This will take about 10 minutes.
Pat the cod portions dry with paper towels. Season on both sides with kosher salt and black pepper.
Once the oil has reached 375F, coat each piece of cod fully into the batter. Allow any excess batter to drip off. Lower the coated cod into the hot oil. Cook 1-2 pieces at a time, removing from the from the oil once the battered cod has turned golden brown (about 5 minutes).
Once fully cooked, use a spider to transfer to a wire rack. Sprinkle with kosher salt.
